Some of our favorite, most used recipes.

Granola
Heat in a pan on low/med heat until sugar is dissolved approx.:
1/4 cup sugar*
1-2 tbsp molasses*
1 cup oil
1/3 - 2/3 cup honey

*1/4 cup brown sugar can be substituted for the 1/4 cup sugar and 1-2 tbsp molasses

Mix in a large (lasagna-sized) oven safe dish:
8 cups oats
1 tsp + cinnamon
1 tsp + ginger
dash or two salt
(Optional additions could include...)
wheat bran
sunflower seeds
sesame seeds
millet
almonds
peanuts

Pour dissolved oil/honey/sugar mixture over oatmeal mixture and stir until dry ingredients are well coated. Place in a 375 degree oven. Bake for approx 30 minutes, stirring halfway through. Remove from oven and allow to cool fully, stirring every so often to keep from sticking. When cool, add any dried fruit you wish (raisins, cranberries, bananas, apples, cherries, blueberries, strawberries....). Pack in an airtight container and enjoy! 

Frittata
Here's a basic recipe for an easy and tasty egg dish that is very versatile.

Heat a small amount of oil (approx 3 tbsp) in a heavy, oven-proof skillet on medium.  When the oil is hot, add approx 3 cups chopped veggies (Use what you have!  Broccoli, potatoes, peppers, onions, asparagus, spinach, garlic, green beans, etc. are all good options.) and cook until tender, stirring occasionally.

Beat 7 or so eggs with a little bit of milk.  Add some parsley or other herbs of your choice.  Turn down the heat on the skillet to low.  Pour in the egg mixture and cook over low heat until the bottom is set and lightly brown (use a spatula to gently push it back around the edges to check the bottom).


When the bottom is lightly brown and middle is nearly set, slip under a preheated broiler and cook until the top is puffed and golden.  Sprinkle with grated cheese & melt if desired.


Shepherd's Pie
7-9 large potatoes, mashed
1 lb ground turkey
1 med-large onion, chopped
3 large cloves garlic, chopped
1 tbsp olive oil
1-2 c frozen corn or peas
Paprika

Prepare mashed potatoes or use leftovers.

Preheat oven to 350.  Heat oil in a skillet over medium.  Saute onions and garlic until soft.  Add turkey and cook through, stirring frequently.  Turn meat mixture into an oven-safe casserole dish.  Top with frozen corn or peas, then spread mashed potatoes over all, to edges to seal.  Sprinkle with paprika.  Bake 25-30 minutes until edges start to turn golden.

Basic Muffins
In a large bowl, combine:
1 3/4 c flour (I use half wheat, half white)
<1/4 c sugar
2 tsp baking powder
1/4 tsp or less salt
wheat bran

Add, then combine until moist:
1/4 c honey
1 egg
1 c milk
1/4 c butter (1/2 stick), softened

Add fruit (apples + cinnamon, blueberries, raspberries, cherries, shredded zucchini....) to taste and fold in.

Bake at 375 in greased muffin tins until golden and a toothpick comes out clean, approx 20 minutes.
